While this apricot chicken recipe is fantastic as is, it is also a great base to build upon for other dinners.
Try cutting the chicken into chunks and cook them on the stove. Add the sauce and some cut green bell peppers, pineapple, and onion. The flavors are incredible; meanwhile, you have just created a unique version of sweet and sour (or possible tangy) chicken. Serve over hot jasmine rice; although, this is a great opportunity to introduce a new noodle to your crowd, such as soba, udon, or rice noodles.
You can also switch out the chicken for shrimp, beef tips, your favorite fish or even tofu. Try tossing in some hearty veggies like green bell pepper, carrots, onions, or even diced sweet potato chunks.
This Apricot chicken recipe also works great in a crock pot; which will make your house smell fantastic when you get home after a long day at work.
